Position Title: Cafeteria Manager-in-Training

Pay Grade: 6 Period of Employment: 9.1 months

Supervised by and/or Reports to: Cafeteria Manager

General Responsibilities: Assist the Cafeteria Manager in planning and organizing the preparation, production and service of school meals in accordance with division approved menus, as well as federal, state and local regulations.

Essential Duties:

Performs cook and/or cafeteria worker responsibilities in their absence as needed.

Understands federal, state, and local meal program regulations; demonstrates knowledge of meal pattern requirements; works with health professionals in coordinating meals for students with special needs.

Directs support staff in the preparation of food following meal standards: presentation, standardized recipes, preparation, and service methods.

Assists with reviewing and completing daily work production records that reflect accurate reports of planned menus; food produced, served and discarded.

Ensures proper leftover use and documentation; monitors batch-cooking to control waste.

Provides an atmosphere that embraces the mission of the Food and Nutrition Service (FNS) operation.

Assumes responsibilities of a manager in his/her absence at any MCPS school nutrition operation.

Maintains program integrity and accountability through compliance with all federal, state, and local regulations, and district policies and procedures.

Helps oversee cashiering activities involving the collection of monies; prepares routine financial reports; operates Point-of-Service (POS) computerized-system and performs related cashiering tasks, as required.

Counts and verifies the daily deposit and prepare the bank deposit in the absence of the manager or as assigned by the manager.

Assists with managing staff according to all federal, state and local employment laws, policies, and regulations.

Assists in creating an atmosphere for employee productivity and satisfaction in the workplace.

Assists with training employees; provides assistance to staff in food production, meal service or cleaning activities, as needed.

Observes and enforces practices of proper food safety and sanitation; ensures cleanliness of all school foodservice areas and equipment used.

Ensures compliance with federal, state and local work safety regulations; ensures safe working conditions exist and are practiced in the foodservice operation.

Provides an environment conducive to protecting the health and well-being of customers through high levels of sanitation standards.

Provides leadership to ensure recycling procedures are followed in compliance with district policies.

Monitors temperatures on freezer(s), refrigerator(s), and food.

Assists manager with calculating and ordering food and supplies following department policies and procedures to meet menu requirements and nutrition standards.

Monitors receiving, checking and ensuring quantity and quality of food and supplies delivered; participates in monthly and weekly inventory of freezers, refrigerator, and storerooms.

Participates in promotions to increase meals served and educate students about healthy eating habits.

Cooperates with the principal, faculty, students, and staff to make the foodservice program an integral part of the total school program.

Maintains an atmosphere that enhances good teacher, student, parent, and cafeteria staff relationships.

Performs other duties as required.

Knowledge, Skills, and Abilities:

General knowledge of food preparation, cooking methods and service of food in large quantities.

General knowledge of kitchen equipment and operations.

Ability to read and follow recipe directions.

Knowledge of Hazard Analysis Critical Control Points (HACCP), food safety, and sanitation principles.

Ability to function well under pressure, to work under time constraints, and to properly manage time and tasks.

Ability to provide excellent customer service and build effective working relationships with associates, students, and staff.

Organized and able to manage multiple responsibilities simultaneously and accurately.

Complete reports and documents in a timely manner.

Communicate effectively in English in written and oral form with people using positive interpersonal skills.

Follows dress code as outlined in the Department of Food and Nutrition Services handbook.

Qualifications:

A minimum of a high school diploma or equivalent.

One year work experience in school food service, food service, management, or equivalent.

Functional skills in reading and writing English and basic mathematics.

Experience in school food service quantity food preparation and use of equipment used in quantity food preparation, or related quantity food preparation, desired.

Ability to operate a computer with knowledge of Microsoft Windows, MS Word, MS Excel, and electronic media (email).

ServSafe certification, desired

Physical Requirements:

Must have the use of sensory skills in order to effectively communicate and interact with other employees and the public through the use of the telephone and personal contact as normally defined by the ability to see, read, talk, hear, handle or feel objects and controls. Physical capability to effectively use and operate various items of office related equipment, such as, but not limited to: a personal computer, calculator, copier, and fax machine. Significant climbing, stooping, kneeling, crouching, reaching, standing, walking, pushing, pulling, lifting, grasping, or repetitive motions required. Must be able to endure extreme temperatures for short periods of time.
