JOB SUMMARY:

Must be thoroughly familiar with all aspects of the National School Breakfast, Lunch, Supper, and Summer Programs; must be equally familiar with goods and large scale preparation methods of these foods for best utilization and yield. Possess ability to prepare nutritionally sound menus and coordinate equipment and personnel to meet schedules and maintain the highest sanitary standards. Must be capable to effectively supervise personnel and keep records as required. Basic and competent computer skills are required. Manager reports to designated School Site Supervisor, who in turn reports to the Director.

PERFORMANCE REQUIREMENTS

Responsibilities:
  • Responsible for completing required daily/weekly/monthly reports such as meal count sheets, inventory, cash reports, production record, edit check sheet and all other reports requested.
  • Responsible for proper cash handling as established by the Nutrition Dept.
  • Prepares and orders food and supplies using the correct software program or proper forms.
  • Must be able to anticipate food needs and usage to order in advance.
  • Responsible for ensuring proper presentation of lunch, USDA standards for portion control,
  • Maintenance of proper serving temperatures (hot food hot and cold food cold).
  • Directs and participates in ensuring the overall safety with the facility through the implementation of OSHA regulations.
  • Directs and participates in the overall sanitation of the facility in accordance with State, local, and Federal regulations.
  • Oversees and coordinates the schedule and work of all kitchen personnel in compliance with departmental policy.
  • Replacing or relieving Café Aide II or III if necessary.
  • Ability to operate all kitchen equipment and can instruct, train and supervise other employees in the proper use, care and safety procedures.
  • Responsible for ensuring proper sanitary and health standards are maintained for food receiving, storage, preparation and serving; cleaning and care of all equipment; and cleaning of all work areas to the safety and sanitation standards set by the Nutrition department.
  • Receives, maintains and stores all food, supplies and equipment in a sanitary and orderly fashion (FIFO).
  • Properly inventories all food, supplies, and equipment. Responsible for ensuring the inventory is turned every 1 1/2 weeks. Inventory must not total more than one weeks usage.
  • Controls quality and quantity of food prepared and served utilizing Offer vs. Serve.
  • Responsible for food, labor, and supply cost control.
  • Responsible for all aspects of catering program in school.
  • Responsible for utilizing standardized recipes in accordance with USDA and departmental requirements when necessary.
  • Must receive and sign for all deliveries and submit signed delivery slips to the office for payment of product received.
  • Maintains proper usage and storage of chemicals and MSDS sheets as well as instructing staff on proper usage.
  • Must be courteous, efficient, and friendly in manner, and in all customer and employee interactions.
  • Maintains work area equipment and dining facilities in a clean and presentable manner.
  • Ensures customers are served quickly and with USDA approved standardized portions in a courteous manner.
  • Make customer monetary transactions in a reasonable and timely fashion if applicable.
  • Responsible for any change funds and cash received to ensure that cashier stations are compliant with departmental policy if applicable.
  • Responsible for ensuring the nutritional integrity of the program by following standardized recipes and portion control.
  • Responsible for training new employees in the school on the use of the POS.
  • Responsible for conducting staff meetings as needed.
  • Responsible for any and all duties as assigned.
  • Responsible for assorted tasks during any shutdown periods.
  • Exercise good verbal and written skills when communicating with the public. Including but not limited to students, staff, school personnel, and Supervisors.
  • Proficiency in the use of Word, Excel, Outlook, and POS system.
  • Ability to learn any new software system implemented by the Nutrition department.
