Job Description:
Working Culinary Director
Reports to:
The Working Culinary Director is responsible to the School Business Official for the operation of the cafeteria.
Nature of the Position:
The Working Culinary Director oversees all operations of the cafeteria within the school district.
Qualifications:
Graduation from high school or possession of a high school equivalency diploma, PLUS; Either:
Four (4) years of experience working in a service or supervisory capacity in food administration, nutrition, dietetics or food preparation on a large scale, or
Completion of a course of study, at a regionally accredited or New York State registered two-year college or vocational school, indicating specialization in foods, nutrition, institution or food service management, or closely related field and one year of full-time or equivalent part-time paid experience in the preparation and serving of food on a large scale; or
Graduation from a regionally accredited or New York State registered four (4) year college or university with a Bachelor?s Degree in Food Service Administration, Food Service Management or a closely related field, or
Any equivalent combination of training and experience as defined by the limits of (1), (2), and (3) above.
Typical Work Activities:
Promotes a whole school approach to food and nutrition education in the classroom
Proactively engages students through the introduction of new food choices
Actively pursues opportunities for improvement within the food service department
Uses fun and trendy techniques to promote the school lunch program to school staff, students and the community
Assists in the preparation of the annual budget
Actively engages in the Farm to School initiative with local agricultural suppliers
Actively collaborates with the agriculture department to serve school grown produce
Works with GST BOCES for bids and other areas as needed
Interviews and recommends personnel for appointment
Supervises in-service training of cafeteria personnel
Supervises and participates in the preparation and serving of food
Supervises the storage and care of food and supplies
Supervises and participates in cleaning of the kitchen, serving, storage and dining areas, and the care of equipment
Participates in the ordering of food and supplies
Keeps all records required for participation in the State and Federal Lunch Programs
Keeps inventory of food and supplies received and used
Supervises end of the month inventory
Provides a monthly cost analysis to the business office for review
Approves employee time records
Plans fun and trendy menus with attention to nutritional value, student choices, and budgetary limitation
Determines requirements and submits requisitions for food and supplies
Verifies all bills
Supervises the collection of and accounting for cash receipts
Makes recommendations for maintenance of and additions to equipment
Performs all cafeteria duties as needed
Supervises and evaluates all staff assigned to the Food Service department
Attends building and district meetings/workshops as required by administration
Establishes an attractive and desirable food service area for all students and adults
Performs other position-related duties as may be assigned by the School Business Official

Knowledge of the principles and practices of large quantity food preparation, menu planning, purchasing, sanitary food handling, and storage;

Ability to plan and supervise the work of others;
Ability to develop effective employee training programs;
Ability to keep records and prepare reports;
